[Hegi Soba] "Hegi" refers to a wooden shallow square box for soba noodles. In the past, hegi was made by peeling boards, and this "peeling" became corrupted to "hegu," and eventually it came to be called "hegi." This soba, made using a seaweed called funori, is said to have originated in Ojiya City, Niigata Prefecture.
